My mother Eva, always taught me to 'do-it-yourself'. "If you want anything done right, do it yourself", she would tell me over and over again. My mother was a very wise woman and believed that one should feed one's body with the best possible nourishment.
I absolutely love making home-made sauces. Pesto happens to be one of my favorites. I used to buy the jarred varieties; some were good, others were awful and so expensive! Most of them are filled with preservatives; the kind that you can't even pronounce!

Fresh pesto contains only a few ingredients; it can be made with basil, arugula, spinach, cilantro, mint or any green that may take your fancy. Next, you can choose your nuts; almonds, walnuts, pine nuts, pistachios...the list goes on! You can be as simple or as creative as you like.
I love to make a classic basil pesto. As long have you have a blender or food processor, this can be ready in a jiffy. Enjoy!
Simple Basil Pesto
2 packed cups fresh basil
2 large garlic cloves
1/4 cup lightly toasted pine nuts
1/2 cup grated parmesan or romano cheese
1/2 - 1/3 cup extra virgin olive oil
Put all the ingredients, except the olive oil in a food processor and pulse. Slowly add in the oil and keep pulsing until you have a smooth consistency. This can be transferred to a glass tupperware or mason jar. Use while fresh and store the rest with a layer of olive oil on top, to prevent discoloration.
